Let’s find out about this ancient peruvian ingredient that gives life to many products loved by the Peruvians and also made the best whiskey in the world this year.

What is it made of?

Corn is one of the most important grains in South America and Peru has 52 of the 63 species in the world, being the second country in the world with the greatest variety of corn.

Loved and known by every peruvian, purple corn is an everyday ingredient in Peruvian cuisine. Used by the Incas in their empire as a source of food and raw material has demonstrated its great value in the eyes of the world.

This Peruvian purple corn comes from Cajamarca and is the key to the whiskey that surpassed the beverages of Scotland and Ireland.

The prestigious Forbes magazine was in charge of announcing the winners of this international competition. And to everyone’s surprise the result of the New York World Spirits Competition 2022 makes the whole country of Peru happy! Out of thousands of candidates, the jury named Don Michael Black Whiskey as the ‘Best In Show’ in all spirits categories.

In view of this award, Brad Japhe, a journalist specializing in spiritual drinks, said that this Peruvian whiskey currently sells for US$55 per bottle, but its price could skyrocket at any time, which is why he recommends collectors to have one in their showcase.

The creator and producer of this wonderful drink is none other than an American named Michael Kurylal, who arrived in Peru ten years ago and fell in love with the peruvian culture and its ingredients, and for the last five years has been testing Andean grains in his distillery located in Lurin.

With this experimentation that took years, he managed to create the Andean whiskey or “Black Whiskey”.

Let’s take a look at its secret ingredient and why this drink is so special and unique in its preparation process.

The key ingredient is INIA 601 purple corn, a cereal with high yield potential, higher anthocyanin content and a fundamental part of the economy of Cajamarca, its city of origin. Its 60% distillate makes up the winner of this contest.

Benefits of the new whisky

This new variety of purple corn is highly beneficial to health because it contains pigmentation, anthocyanin and antioxidants that prevent various types of cancer; it also helps lower high blood pressure and cholesterol.

The recipe uses 60% purple corn, 30% domestic wheat and the remaining percentage of malted barley -an imported grain as part of the recipe- to prepare it.

But how do we obtain such a unique and spiritual Andean Whiskey? First the purple corn is cooked with wheat grains and malted barley. In this process, the corn starches are converted into fermentable sugars. This is fermented for a few days at high temperatures and then distilled twice.

Double distillation has a lot to do with the purity of the beverage. The objective of the first distillation is to obtain as much alcohol as possible from the grains. In this part, 30% alcohol is obtained, that is, a mixture of alcohol and water, so it is not yet pure. In the second distillation, the liquid obtained is crystalline, pure and clean.

And that’s how we get this wonderful whiskey that retains a slightly smoky touch. Not peaty, but more of a toasty, barbecue-like variety that works well with fall flavors. Complexity is realized beyond the mid-palate when a combination of clove and dark roasted coffee come into play.

The peruvian whiskey has 45% alcohol, but in its premium version, soon to be launched, it can reach up to 58%.

Being the most awarded drink in South America and in this way competing with the best whiskeys in the world. It is currently being exported to different countries, together with Andean Vodka and Crema de los Andes, products also produced at Don Michael’s distillery, which are based on the Andean Whiskey recipe.

This is how our Black Whiskey celebrates its entry into the market on World Whiskey Day 2022, being a world-class whiskey as well as the first and only Andean whiskey in the world. Are you ready to give it a taste ?
