What is Pisco?

Pisco is a colorless or yellowish-to-amber colored spirit produced in winemaking regions of Peru.

Made by distilling fermented grape juice into a high-proof spirit, it was developed by 16th-century Spanish settlers as an alternative to orujo, a pomace brandy that was being imported from Spain. Pisco is the Peruvian national spirit and a real South American favorite

Pisco Cocktails

Pisco is a versatile spirit that can be mixed and muddled in countless ways. There are four traditional Peruvian pisco cocktails: Pisco Punch, Pisco Sour, El Capitán, and The Chilcano, The Pisco Sour is Peru’s national drink and is made with pisco, lime juice, simple syrup, and egg white

Other popular pisco cocktails include the Pisco Paloma, Pisco Punch, and Andean Dusk.

How Pisco is Made

Peruvian Pisco focuses on creating an ultra-clean presentation through the methods used in production. Because distillation separates the alcohol from the heavier liquids, a clean distillation process can greatly increase the aromatics of the materials distilled.

With this in mind, Peruvian Pisco must be made from a just-fermented, or “young,” wine. After distillation is complete, Pisco must be held for at least three months to allow for the flavors and composition of the beverage to settle.

However, such aging must occur in a vessel that does not impact the purity of flavor — stainless steel or glass are most commonly used. Wood is not allowed

Here’s a detailed recipe to prepare a classic Pisco Sour, a popular Peruvian cocktail enjoyed by many:

Ingredients:

– 2 ounces of Pisco (Peruvian grape brandy)

– 1 ounce of fresh lime juice

– 3/4 ounce of simple syrup (equal parts sugar and water)

– 1 egg white

– Angostura bitters

– Ice cubes

Instructions:

1. In a cocktail shaker, combine the Pisco, lime juice, simple syrup, and egg white.

2. Add a handful of ice cubes to the shaker and close it tightly.

3. Shake vigorously for about 15-20 seconds to ensure proper mixing and frothiness.

4. Fill a glass with fresh ice cubes.

5. Strain the contents of the shaker into the glass, allowing the foam to form on top.

6. Finish by adding a few dashes of Angostura bitters on the foam for aroma and taste.

7. Optionally, you can use a straw or a spoon to create decorative swirls with the bitters on the foam.

8. Serve the Pisco Sour immediately and enjoy!

Note: Pisco Sour is typically served as a pre-dinner drink or a refreshing cocktail on hot days. Adjust the sweetness and sourness according to your taste by adding more or less simple syrup and lime juice. Remember to consume alcoholic beverages responsibly. Cheers to your Peruvian experience!
